Once, I made carrot cake cupcakes with maple cream cheese icing and my friend, Heather (now) Fossmo, loved them. She loved them so much that when she got engaged she asked if I could fashion them into a wedding cake. I was a little nervous at accepting but knew the only answer was yes, yes, yes, and that my dear friend Beth, who had completed a similar task before, would help me out. In fact, I couldn't have done it without her. And the wonderful, calming support of my friend Jackie.
Here's the finished product. After much investigation into batter amounts, cake boards, dowels, renting cake pans and only a few almost freak-outs, I'm pretty happy with the result.
And I think the happy couple was too.
Not to mention, it was insanely delicious.
